Healthy Chicken Salad

An online recipe with instructions for making Healthy Chicken Salad.

Ingredients

Chicken Ingredients
- 2 large chicken breasts
- 1 carrot, cut in half
- 1/2 onion, peeled and cut into quarters
- 4 cups low-sodium chicken or vegetable broth

Dressing Ingredients:
- 1/4 cup of mayonnaise
- 1/4 cup of 2% plain Greek yogurt (not sweetened)
- 1/2 teaspoon of Dijon prepared mustard
- 1 teaspoon of fresh lemon juice
- salt (to taste)
- ground black pepper (to taste)

Instructions

Place the chicken breasts, carrot, and onion in a medium saucepan and cover with the broth. Bring the broth just to a boil, cover, and reduce heat to low. Poach the chicken and vegeables on low heat for 20 to 25 minutes, or until chicken is firm to the touch.

Drain the chicken, let it cool, and either shred it using two forks or your fingers or chop it with a knife.

In a medium size bowl, combine the mayonnaise, yogurt, mustard, and lemon juice. Season to taste with salt and pepper.

Mix the chicken with the dressing and chill until cold.
