Greek Stuffed Mushrooms

An online recipe with instructions for making Greek Stuffed Mushrooms

Ingredients

- 10 ounce package of frozen chopped spinach (cooked or not cooked)
- 24 large mushrooms
- 1/2 cup of chopped green onions
- 2 cloves of garlic, minced
- 1/2 cup of 1% low fat cottage cheese
- 1/4 cup of parmesan cheese
- 1/4 cup of feta cheese
- 1/2 cup of fresh mint, chopped (or 2 tablespoons dried)
- salt to taste
- black pepper to taste
- mint leaves for garnish (optional)

Instructions

Preheat oven to 350 degrees F

Drain the spinach and squeeze all the water out of it

- Clean the mushrooms and remove their stems.
- Chop the mushroom stems

Spray a saucepan with non-stick spray. Cook the chopped mushroom stems, green onions and garlic in the saucepan for five minutes

Mix those vegetables with the spinach, cheese, and chopped mint. Add salt and black pepper to taste.

Fill the mushrooms with that mixture, mounding high.

Spray a baking sheet or pan with non-stick spray Arrange the stuffed mushrooms on a baking sheet or pan. Bake them at 350 degrees for about 15 minutes.

- Garnish with mint leaves if desired
- Serve immediately
