Gulliver's Peanut Cole Slaw

The popular coleslaw served at Gulliver's restaurant in the 1980's included unsalted peanuts and Italian dressing flavored with wine vinegar and sugar.

Ingredients

- 6 cups of shredded cabbage
- 1/4 cup of green onions
- 1/3 cup of chopped celery
- 1/3 cup of unsalted, roasted peanuts
- 2 tablespoons of sugar
- 1-1/2 teaspoons of seasoned salt
- 2 tablespoons of red wine vinegar
- 2/3 cup of Italian salad dressing

Instructions

Mix the cabbage, green onions, celery, and peanuts in a large bowl. In a separate container mix the vinegar, salad dressing, sugar, and salt, and mix well or shake until well blended. Pour the liquid mixture over the cabbage and vegetables and toss until the cabbage is coated with dressing.
