Italian Bean Salad

An online recipe with instructions for making Italian Bean Salad

Ingredients

Salad Ingredients:
- 3/4 pound of fresh mushrooms
- 1 tablespoon of olive oil
- 1 pound can of green beans
- 1 pound can of yellow wax beans
- 1 pound can of kidney beans
- 1 pound can of Italian green beans
- 1 pound can of garbanzo beans
- 6 ounces of whole pitted green olives
- 1 (8.5 ounce) can of artichoke hearts
- 1/4 cup of parsley
- 2 tablespoons of chopped pimiento
- lettuce cups or bed of lettuce for serving

Dressing Ingredients:
- 1/2 cup of olive oil
- 1/4 cup of wine vinegar
- 2 tablespoon of chopped chives or green onion
- 3/4 teaspoon of salt
- 1 teaspoon of basil
- 1 teaspoon of oregano
- 1/2 teaspoon of mustard (dry or prepared?)
- 1/2 teaspoon of black or white pepper
- 1/4 teaspoon of cayenne pepper

Instructions

Saute mushrooms in 1 tablespoon of oil until just tender, then cool the mushrooms. Mix the salad dressing ingredients, then mix the dressing with the salad ingredients. Chill the salad for 24 hours. Stir the chilled salad to mix well before serving

SERVING SUGGESTIONS:
- serve in invididual lettuce cups
- serve in scooped out green pepper sheels
- serve in scooped out fresh tomato shells
- serve over quartered fresh tomato wedges
- serve in a large lettuce lined bowl
