Mexican Wedding Cakes

Ingredients

- 1/2 cup of powdered
- 1 cup of butter, softened
- 2 teaspoons of vanilla
- 2 cups of all purpose flour
- 1 cup of finely chopped pecans
- 1/4 teaspoon of salt
- Powered sugar for coating the cookies

Instructions

Preheat the oven to 325 degrees F.

Mix together the 1/2 cup of powedered sugar, the butter, and the vanilla.

After the butter mixture is well-blended stir in the flour, nuts, and salt until the flour is no longer dry and the dough holds together.

Form the cookie dough into one inch balls and place one inch apart on ungreased cookie sheets.

Bake the cookies 15 or 20 minutes, until they are set but not brown.

Remove the cookies from the cookie sheet immediately after cooking.

Cool the cookies slightly then roll them in the powered sugar.

Cool the powdered sugar coated cookies completely and roll them in powedered sugar again.
