Greek Pastitsio Casserole

Ingredients

MEAT SAUCE INDREDIENTS
- 1 medium size onion, chopped
- 1 clove of garlic, minced
- 2 tablespoons of olive oil
- 1 + 1/2 pounds of ground beef
- 1 teaspoon of salt for meat sauce
- 2 dashes of cinnamon
- 1 can of tomato sauce
WHITE SAUCE INDREDIENTS
- 3 tablespoons of cup of butter
- 1/4 cup of flour
- 2 cups of milk
- 1/2 teaspoon of salt
- dash of white pepper
- pinch of nutmeg
- 1/3 cup of parmesan cheese
OTHER INGREDIENTS:
- 8 ounces of elbow macaroni
- 2 whole eggs
- 8 ounces of shredded cheddear cheese

Instructions

Preheat oven to 350 degrees

MEAT SAUCE INSTRUCTIONS:
- Saute the onion and garlic in oil until soft.
- Crumble in the ground beef and add 1 teaspoon of salt.
- Cook, stirring until the meat loses its red color.
- Pour of the fat.
- Stir in the cinnamon
- Add the tomato sauce
- set the meat sauce aside

WHITE SAUCE INSTRUCTIONS:
- Melt 3 tablespoons of butter in a saucepan.
- Stir in the 1/4 cup of flour
- Add the 2 cups of milk
- Cook, stirring constantly until smooth and thick
- Add 1/2 teaspoon of salt, pepper, nutmeg and parmesan cheese

MACARONI INSTRUCTIONS:
- Cook macaroni in salted boiling water 10 to 12 minutes.
- drain well and put back in the pot
- break in the eggs and add 2 tablespoons of butter
- briskly beat the eggs and butter into the macaroni

ASSEMBLY INSTRUCTIONS:
- butter a shallow 2-1/2 quart baking dish
- layer ingredients like this:
- (1) half of the macaroni
- (2) all of the meat sauce
- (3) half of the cheddar cheese
- (4) other half of the macaroni
- (5) white sauce
- shake the dish to settle the white sauce.
- top with remining cheddar cheese
- dot with butter
- sprinkle with nutmeg

BAKING INSTRUCTIONS:
- bake for 1 hour at 375 degrees.
