Flourless Peanut Butter Cookies

Our favorite peanut butter cookie recipe has only three ingredients (4 if you add vanilla) and none of those ingredients is flour. These flourless peanut butter cookies only contain peanut butter, sugar, and eggs. Vanilla can also be added for a richer flavor. We have included two versions of the the recipe for these cookies, one using egg whites only and one using a whole egg.
Peanut Butter Cookies


Recipe Using Egg Whites

Ingredients: - 1-1/2 cups of peanut butter
- 1 cup of sugar
- 2 egg whites, unbeaten
- 1 teaspoon of vanilla (optional)

Instructions
Preheat oven to 375 degreres F. Cream the peanut butter with the sugar. Stir in the unbeaten egg whites and mix thoroughly. Place walnut size balls of the cookie dough on ungreased cookie sheets and flatten them with the tines of a fork, pressed in two directions. Bake at 375 degrees for 10 to 12 minutes. cool slightly before removing from the pan so they won't crumble. Makes about 3 dozen.

Recipe Using Whole Eggs

Ingredients:
- 1 cup of peanut butter (chunky or smooth)
- 1 cup of white granulated sugar
- 1 large egg, lightly beaten
- 1 teaspoon of vanilla (optional)

Instructions Preheat the oven to 350 degrees F. Mix all three ingredients and the vanilla if you are using it. Drop tablespoon-size lumps dough onto un-greased cookie sheets, about one inch apart. Flatten the lumps with the tines of a fork twice, one in one direction, and once in the other direction. Bake the cookies in the preheated 350 degree oven for about eight minutes. Some recipes for this cookie include sprinkling coarse sea salt or coarse sugar sprinkled over the tops of the cookies before baking.
