Pollo Borracho Mexicana

An online recipe with instructions for making Pollo Borracho, a dish known in English as "Drunken Chicken".

Ingredients

- One (3 pound) roasting chicken or chicken pieces
- 2 tabelespoons of oil
- 1.5 onions cut into rings
- 1/6 cup of parsley
- 1 tablespoons of sesame seeds
- 2 whole peppercorns
- half inch piece of cinnamon stick
- 1/8 teaspoon of cloves
- 1 small bay leaf
- 1 tablespoon of vinegar
- 1/4 cup of wine
- 8 seedless green olives stuffed with pimentos
- 2 green chiles

Instructions

In a skillet, cook the onions, parsley, sesame seed, peppercorns, cinnamon, cloves and bay leaf.

Add the chicken and brown it.

Add the vinegar, wine, olives and chiles.

Cover and bake at 275 degrees for 2.5 hours.
