South Carolina Shrimp Paste Recipe

Ingredients

- 1.5 pounds of raw shrimp, shelled
- 8 tablespoons of unsalted butter, softened
- 2 tablespoons of pale dry sherry
- 4 teaspoons of lemon juice
- 4 teaspoons of finely grated (not shredded) onion
- 1/2 teaspoon of ground mace
- 1/2 teaspoon of dry mustard
- 1/2 teaspoon of ground hot red pepper
- 2 teaspoons of salt
- 1/2 teaspoon of ground white pepper

Instructions

Cook shrimp in boiling water for 3 minutes. Drain the shrimp and dry it thoroughly. Grind the shrimp to a smooth paste or chop and pound it to a smooth paste.

Cream the butter and beat into it the sherry, lemon juice, onion, mace, mustard, red pepper, salt and white pepper. Thoroughly mix the shrimp paste with the creamed butter mixture.

Pack the shrimp into a 3 cup crock, bowl or mold. Cover it and chill for at least four hours.

If you packed the shrimp paste into a mold, dip the outside of the mold in hot water and unmold the shrimp paste onto a plate. This can also be done if you packed the paste into a small bowl.

Traditionally this Charlotte, South Carolina specialty is served with crackers for breakfast. It can also be served as an appetizer or snack with crackers or small bread rounds.
