Bunca's Lemon Jello Cake

This tart and sweet lemon cake is easy to make because is uses packaged lemon cake mix and it has only a few ingredients: This cake is unusual in that you poke it full of holes and pour on the icing when the cake is still very hot.

Ingredients

Cake Ingredients:
1 package of lemon cake mix
4 eggs
1/2 cup of oil
3/4 cups of water
1 (3 ounce package) of lemon Jello

Glaze ingredients
1-1/2 cups of powdered sugar (confectioner's sugar)
1/2 cup of lemon juice (the juice from about 2 lemons)

Instructions

Preheat the oven to 350 degrees. Beat the eggs thoroughly with the oil, water, and Jello. Mix in the lemon cake mix. Pour into a 9 inch by 13 inch ake pan. Bake 30 to 40 minues at 350 degrees. While the cake is baking, mix the glaze ingredients. Immediately upon removing the cake from the oven, ] use a long toothpick, or something similar, to poke the cake full of holes, about one inch apart. Spoon the icing over cake, and especially over the holes in the cake.
