Wheat Flour Chinese Almond Cookies

This recipe for Chinese style almond cookies is made using 100% wheat flour. We also have a recipe for Chinese style almond cookies made with a combination of wheat flour and almond flour and a recipe made with lard instead of butter or shortening. See our other Chinese Almond Cookie Recipes.

Ingredients

- 3 cups of sifted flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of sugar
- 1 1/2 cups of shortening
- 1 teaspoon of almond extract
- 1 egg, beaten
- 1 cup of blanched almonds (about 50 almonds)

Instructions

COOKIES: Preheat the oven to 350 degrees. Mix together the sifted flour, salt, and baking soda. In a separate bowl cream the shortening then thoroughly mix in the beaten egg and the almond extract. Roll the cookie dough into one in ch balls and place them on a greased cookie pan. Make an intentation in the center of each ball and place one blanched almond in the indentation on top of each cookie.

EGG WASH TOPPING: In a small bowl beat the large egg yolk with the one teaspoon of water. Brush this egg wash on the top of each cookie.

BAKING: Bake cookies about 15 to 18 minutes at 350 degrees.
