Green Beans and Potatoes With Bacon

An online recipe with instructions for making stewed green beans with potatoes and bacon. This is an old fashioned, Southern USA style recipe for stewed green beans and potatoes flavored with bacon, onion, and garlic. Some cooks like to leave the skins on the potatoes, but our grandmother always peeled the potatoes for this dish because when you cook potatoes in liquid a long time, their skins can begin to slip off.

Ingredients

- 1/2 pound (8 ounces) of thicked sliced bacon
- 1 cup of chopped onions
- 1 tablespoon of minced garlic
- 2 pounds of fresh green beans
- 1/4 teaspoon of cayenne pepper
- 1/4 teaspoon of black pepper
- 8 small new potatoes or red potatoes, peeled or unpeeled

Instructions

In a Dutch Oven, cook the bacon, onions, and garlic together over medium heat until the onions and garlic are tender and most of the bacon fat has rendered.

Add the green beans, potatoes, cayenne pepper, black pepper and potatoes, and enough water to cover everything. Bring to a boil then reduce the heat to low. Simmer until the beans and potatoes are very tender, usually 1 to 2 hours, depending on how "stewed" you want them.
