Potatoes Anna

An online recipe with instructions for making Potatoes Anna, a dish known in French as Pommes Anna.

Ingredients

- 2.5 to 3 pounds of baking potatoes (long shape)
- 1-1/2 cups of clarified butter
- salt and pepper to taste

Instructions

Preheat the oven to 450 degrees.

Peel potatoes and shape them into uniform cylinders. Slice the cylinders into thin rounds no more than 1/8 inch thick

Pour half of tbe butter into a deep and heavy 8 to 10 inch skillet with a tighty fitting lid. Heat until the butter is quite hot.

Dry the potato sliced completely

Place one potato slice in the middle of the skillet. Working quickly, overlap the center slice with a ring of overlapping potatoes.

Overlap that ring of slices with another ring of slices laid in the opposite direction. Repeat that layering until the bottom of the skillet is covered.

Sprinkle the the first layer of potatoes with salt, pepper ad 2 tablespoons of butter

Add more layers of potatoes the same way (typically about 5 layers).

Continuously shake the pan and adjust the heat.

Press the potatoes and cover tightly.

Bake the potatoes in the oven at 450 degrees for about 30 minutes.

Uncover them and bake another 15 minutes.

Unmold the potatoes (turn them out onto a plate) and serve.
