Swedish Brown Beans

An online recipe with instructions for making Swedish Brown Beans, a dish also known in Swedish as Bruna bönor och fläsk (brown beans and pork).

Ingredients

- 2 cups of dried brown beans or pinto beans
- 12 cups of water
- 4 teaspoons of salt
- 4 teaspoons of oil
- 8 slices of bacon, diced
- 1/4 cup of onion, chopped
- 2 clove of garlic, minced
- 1/4 teaspoon of black pepper
- 1/4 cup of light molasses
- 1 cup of catsup
- dash of tabasco sauce
- dash of Worcestershire sauce


- 1-1/2 cups of brown sugar
- 1/2 cup of cider vinegar
- 1/4 teaspoon of dry mustard
- 3 tablespoons of cornstarch
- 1/4 cup of water

Instructions

Soak the beans in the 12 cups of water overnight.

Add the salt and oil to the beans and their soaking water.

Cover tightly and simmer for two hours or unti tender.

Saute the bacon nd onion together until the onion is tender.

Add the onion to the beans along with the garlic, black pepper, molasses, catsup, tabasco, Worcestershire sauce, brown sugar, vinegar and mustard.

Separately, mix the 3 tablespoons of cornstarch with the 1/4 cup of water. Stir the mixture into the beans.

Bake at 325 for 1-1/4 hour. Serve hot

Flavor improves with reheating.
